Here are three recipes with cannabis to try this summer:
1. Cannabis Simple Syrup
As the name implies, cannabis simple syrup is a liquid sweetener infused with cannabis.
This foundational recipe can transform almost any dessert or drink into a cannabis edible. Simply substitute any regular liquid sweetener with cannabis simple syrup. Try cannabis simple syrup in lemonade, iced tea, alcohol-free cocktails, ice creams and sorbets, blended coffees, and more. You can also try layering it over fresh fruit in lieu of honey.
To make a cannabis simple syrup, you’ll need the following ingredients:
- 3 cups water
- 3 cups granulated sugar
- 3 tbsp vegetable glycerin
- 4 grams of cannabis flower (finely chopped)
Step 1: Add water to a pot and bring to a low boil.
Step 2: Add cannabis slowly, stirring frequently. Add sugar and stir until completely dissolved.
Step 3: Cover and cook for 20 minutes. Watch the pot to make sure it doesn’t boil over.
Step 4: Uncover, add vegetable glycerin and continue cooking for 7-8 minutes. Stir constantly until the mixture has thickened.
Step 5: Remove the pot from the stove, allow the syrup to cool and then strain it through a cheesecloth into an airtight container. Store in the refrigerator to preserve freshness.
Serving size varies, but this recipe will typically yield 20-24 servings. We recommend sampling your cannabis simple syrup to determine its potency before adding it to any recipes.
2. Cannabis Mint Lemonade
This recipe adds an alternative twist to lemonade and balances the flavors of cannabis with the tartness of fresh lemons. You can also combine this lemonade recipe with iced tea.
To make cannabis-infused mint lemonade, you’ll need:
- ½ cup fresh whole mint leaves
- 5-6 lemons (enough to make 1 cup lemon juice)
- 3 cups cold water
- 1 cup cannabis simple syrup (adjust to taste)
Step 1: Prepare cannabis simple syrup (see recipe above) and pour approximately 1 cup into a pitcher. Depending on the strength of your cannabis simple syrup, you may prefer to add more -- or cut the cannabis simple syrup with a non-cannabis syrup to make your lemonade less potent.
Step 2: Juice lemons. Add 1 cup lemon juice to a blender, then add mint leaves. Pulse 3-4 seconds. Add lemon/mint mixture to pitcher with cannabis simple syrup. Stir to combine.
Step 3: Add water and stir. Serve over ice or refrigerate immediately. This recipe makes approximately six servings.
3. DIY Cannabis Popsicles
Homemade popsicles are among our favorite cannabis recipes for hot summer because they’re easy to make.
To make your own cannabis popsicles, you just need a popsicle mold, fruit juice, and cannabis simple syrup. Add your ingredients to the popsicle mold and freeze.
Our favorite DIY popsicle is a homemade version of the classic creamsicle. To make a cannabis-infused version, you’ll need:
- Popsicle mold and popsicle sticks
- 1 cup heavy cream
- ½ orange juice or pineapple juice
- 1 tsp vanilla extract
- 2-3 tbsp cannabis simple syrup (add more or less depending on preference and potency)
Step 1: Mix heavy cream, vanilla extract, and cannabis simple syrup. Add juice. Stir until all ingredients are combined.
Step 2: Pour mixture into the popsicle mold. Freeze for 10-15 minutes, then remove from the freezer and add popsicle sticks.
Step 3: Return to the freezer. Let freeze for 3-4 hours, then enjoy.
